Watermelon, Tomato, Feta, and Mint

The combination of these ingredients, particularly with the fresh tomatoes of summer, makes for a quick, colorful and satisfying summer salad.  I like to find heirloom tomatoes that might be yellow, green, brown or somewhere in between to play against the redness of the watermelon.  This is purely aesthetic – any fresh summer tomato will do.

 

2 cups watermelon, cut into bite sized chunks

2 medium heirloom tomatoes, cut into bite sized chunks

½ cup feta crumbled feta cheese

Small handful of fresh mint leaves, roughly torn or chopped

Extra virgin olive oil

White balsamic vinegar

Medium grained or flaky sea salt, such as Maldon

 

1.     Combine watermelon and tomatoes in a bowl, drizzle with olive oil and toss very gently.

2.    Turn out onto a serving plate, and drizzle with balsamic vinegar.

3.    Sprinkle with sea salt and garnish with feta and mint to serve.
